Spicy Beef with Oyster & Black Bean Garlic Sauce

Ingredients:
450 g beef (rump steak), thinly sliced into strips
8 baby corns, chopped
10-15 mange tout peas, trimmed
small yellow pepper, cut into thin strips
small orange pepper, cut into thin strips
1 red chilli, chopped
2 garlic cloves, chopped
2 slices fresh ginger
3 tbsp Oyster sauce
3 tbsp Black Bean Garlic sauce
1/2 lemon
2 tsp honey
4-6 tbsp Oil

Marinade beef in Oyster sauce, Black Bean Garlic sauce, honey and lemon juice for 30 minutes. Heat a non-stick frying pan or wok over a high heat. Remove beef from marinade and stir-fry for 5 minutes. In separate pan stir-fry all vegetables for 3 minutes. When ready add fried vegetables to the beef, add remaining marinade from a bowl (scrape off as much as possible), stir and cook for further 2-3 minutes. Serve with plain rice. Bon appetit.

Ingredients:

400 g beef mince meat
2 Romano peppers, cut into bite-size chunks
5-6 shallots, cut into wedges
2 cloves garlic, chopped
1 tsp ground paprika
1 tsp chilli powder
1/2 tbs ground cumin
2 tbsp tomato puree
400 g tinned chopped tomatoes
400 g tinned red kidney beans
1 beef stock cube
1-2 tbsp sugar
tabasco, few drops
2 thin slices fresh ginger
squeeze lime juice
200 ml water
4-6 tbsp oil

 

Heat the oil in a large frying pan. Add shallots, garlic, peppers and cook for 4-5 minutes. Then add the mince and cook until lightly browned. Transfer all to large pan or casserole dish and add tomatoes,water, ginger, cube stock, sugar and all spices. Squeeze a bit of lime juice and add few drops of tabasco. Stir well. Half cover the pan with a lid and simmer for 30 minutes.

Serve with soured cream or natural yoghurt, rice and fresh veg salad.

Ingredients:
400 g frying beef steak, cut into stripes
3 sweet yellow mini peppers, cut into bitesize chunks
5-6 shallots, cut into wedges
2 garlic cloves, chopped
2 slices fresh ginger
4-5 tbsp hoisin sauce
2 tbsp soy sauce
700 ml stock
2 whole star anise
1 tbsp granutated sugar
3 tbsp oil
black pepper

Marinade beef in 2 tbsp of hoisin sauce for 1-2 hours. Heat a non-stick frying pan or wok over high heat. Remove beef from marinade and fry for 5 minutes turning occasionally. Then add shallots, peppers and garlic and continue to stir-fry them for 3-4 minutes until they are brown. Then transfer all into medium size casserole dish. Add 2-3 tbsp of hoisin sauce, soy sauce, sugar, star anise, slices of ginger and stock. Bring to the boil and then turn the heat down and simmer for 1 hour. Stir occasionally.

Serve with rice and your fave green vegetables.

Stir fry beef in anchovies and garlic marinade

Ingredients:

braising steak, cut into strips
3-4 small anchovies fillets in oil, chopped
2 garlic cloves, sliced
2 tbs soy sauce
2 dessert spoons of honey
10 fresh thyme springs
salt, pepper
5 tbs olive oil
2 tbs oil

Start off with marinade. And if possible marinade meat overnight and if not than at least for 4-5 hours. And here is the marinade: mix the olive oil, anchovies, garlic, soy sauce, half of fresh thyme, honey and add beef. Do not put any salt at this point. Just a bit of freshly grounded pepper. Cover all in cling film and refrigerate.

Heat the oil in a wok or large frying pan. Remove beef from marinade and cook for few minutes till nice and brown. Then add marinade, reduce heat and simmer further till tender. If required add a bit of water. Season well.

Serve with rice and roasted cherry tomatoes. Garnish with fresh thyme and serve immediately.
