My favourite casual get-together dish!
Meatballs in Spicy Tomato Sauce and Linguine Pasta
500 g pork mince meat
5-6 mushrooms, sliced
2 onions, cut into wedges
2 cloves garlic, chopped
1 egg, beaten
400g tinned tomatoes, chopped
1 yellow pepper, cut into bite-size chunks
1-2 tsp ground paprika
6-8 fresh thyme springs
6-8 tbsp oil
2-3 tbsp flour
2 tbsp sugar
200g linguine pasta
Place the mince, chopped garlic, egg, salt and pepper in a large bowl and mix together well. Then shape firmly into 15 -18 small balls. Scatter the flour onto large, flat plate and roll the meatballs in the flour to coat.
Heat the oil in a large frying pan and fry the meatballs for 10-12 minutes or until cooked through. Then transfer to a large pan or casserole dish. Wipe the frying pan, add oil and fry onions, peppers and mushrooms. When softened transfer to large pan with meatballs. Add tomatoes, sugar, ground paprika and cook for 15-20 minutes.
Serve with Linguine pasta and garnish with remaining fresh thyme.
