Honeydew Melon & Whipped Coconut Cream
honeydew melon, ripe
2-3 tbsp caster sugar
160 ml coconut cream
200 ml double cream
Scoop balls from melon. Melon scoop it a great little gadget so if you can get one! All you have to do is cut melon in half and then using melon scoop press down firmly until the melon flesh is all the way into the scoop. Then twist to make round ball. If you do not have a melon scoop just slice it into bite size chunks. Squeeze a bit of lemon juice all over and gently mix.
For the coconut cream: Place double cream, coconut cream and sugar in a mixing bowl. Whip all ingredients until it is the consistency of whipped cream. Stop occasionally to scrape down the sides. Voila all ready.
Arrange in nice, tall glasses and enjoy!
