Easy! Actually more than easy! And this is so good, so fragrant and so flavorful. What a refreshing change of pace.
Lemon and Herbs Chicken with Potatoes
400-500 g chicken breast mini fillets
500 g Charllote potatoes or baby new potatoes, cut into bitesize pieces
1 lemon, cut in wedges
2-3 small garlic cloves, unpeeled
2 tbsp olive oil
butter, large knob
dried herbs: basil, rosemary, tarragon
In a large bowl mix dries herbs, olive oil, salt, pepper and add chicken pieces. Marinade for 3-4 hours. Preheat the oven to 200°C. In a large baking tray arrange potatoes, garlic, lemons and thyme. Add 4-5 tbsp of water, butter and place chicken pieces on top of the potatoes. Cover all with a foil and cook for 20 minutes. Then remove the foil and let it cook for another 10 minutes until chicken is golden light. If required put few more spoons of water. To get it nice and golden I often put it under the grill for 4-5 minutes. Drizzle over remaining sauce so that it doesn’t get dry. Serve with your favourite veggies.
