Cheese straws

Cheese straws yeap my little addiction. And I eat a lot of them. Thought that it would be nice to share it with you …hungry people! Enjoy!

Cheese straws

Ingredients:
80g plain flour
40g unsalted butter
25 g parmesan cheese, grated
25 g cheddar cheese, grated
1 small egg, beaten
½ tsp English mustard
freshly ground black pepper
salt
optional for sprinkle: freshly cayenne pepper, sesame seeds or poppy seeds.

Sift the flour into mixing bowl. Add pinch of salt and pepper. Then rub in the butter until the mixture resembles breadcrumbs. Add half of a beaten egg and mustard and bind the mixture to a soft dough. Add cheese and mix all well. Turn on to a lightly floured surface and roll out to 15cm square. Then cut into narrow fingers and arrange on lightly greased baking sheet. Brush with remaining egg and then sprinkle whatever you like: cayenne pepper, sesame seeds or poppy seeds.
Bake in a preheated oven at 180°C for 15 minutes until golden. Allow to cool on a wire rack and if required store in an airtight container.
