I love this! So addictively good! It’s simple, healthy and tasty. And it takes just few minutes to prepare.
Prawns with avocado.
1 avocado, halved
2 generous handfuls cooked and peeled prawns
mayonnaise 4 tbs
olive oil 1 tsp
balsamic vinegar 1 tsp
sugar 1 tsp or slightly more if you want it sweeter
pinch of chilli or fresh parsley
Cut the avocado in half and pop out the stone. In a little bowl mix mayonnaise, vinegar, olive oil and sugar. Make sure that all is smooth. Add pinch of salt and pepper and let rest for 10 minutes. Arrange prawns in avocado and then pour over as much dressing as you like. Sprinkle with chilli or fresh parsley and serve immediately. Bon appetite.
